Baked Banana Peanut Butter Chocolate Chip Oatmeal

Yes, another baked oatmeal.  I just love how easy they are to make, and healthy for something sweet, too.  Plus, can’t beat the flavor combination of banana, peanut butter, and chocolate!  I was very happy eating this for my recent birthday rather than a more traditional cake.

Combine the dry ingredients:

2 cups oats

1/4 cup brown sugar

1 tsp baking powder

Sprinkle of salt

with the wet ingredients:

2 mashed bananas (ripe or thawed from frozen)

1/2 cup natural peanut butter

2 cups milk

1 tsp vanilla extract

Then stir in 1/4-1/3 cup of dark chocolate chips.  Pour mixture into lightly greased 8×8 baking dish, and bake for about 40 minutes.
