Scrambled Egg Tacos



I had some tortillas and cilantro left over from the BBQ seitan tacos I made earlier in the week, and wanted to make an easy lunch since I’m feeling a little under the weather, so thought of these scrambled egg tacos.  Added feta cheese to the scrambled eggs (which were a mixture of regular eggs and liquid egg whites), then put in tomatoes, veggie sausage, cilantro, hot sauce, and ground black pepper.  They were very good!  And the tortillas are reduced carb ones from Trader Joe’s that are only 45 calories each, so pretty healthy, too.
