I was recently over at a friend’s house and she was making baked goods for her family, including raw vegan brownies. While I love the ingredients, I’d never thought of making raw desserts before. I gave these a try, and subsequently started to look for other raw desserts to make. This is a recipe review, adapted from the rawtarian (http://www.therawtarian.com/raw-brownie-recipe). I like these brownies because they satisfy my sweet tooth without too much guilt.
-2 cups dates
-2 cups walnuts (or other nuts of your choice)
-4 tablespoons honey
-10 tablespoons raw cacao powder (can substitute unsweetened cocoa powder)
-handful of shredded coconut
Chop the nuts in a food processer (I have a Cuisinart mini-prep, so made this recipe in 2 batches, using half of the ingredients in each batch). Add dates and process the mixture again (this being my first experience with medjool dates, I did not remove the pits, which is why you will see some date pits in the picture if you look closely). Add the rest of the ingredients, and continue to process until the ingredients are well mixed, scraping down the sides of the processer if needed.
Put the mixture into a baking dish, and press down with your hands to even it out in the pan. Cover and refrigerate for a couple of hours- it will be easier to cut the brownie recipe into pieces if it has had some time to chill.
