These mushroom burgers are another recipe I got from my mom. The first time she made them for me she asked, “You’ve never had my world famous mushroom burgers before?” They are simple to whip up and a great vegetarian burger option.
-1 package white button mushrooms
-3/4 package of shredded low-fat cheese
-salt, pepper, and crushed red pepper flakes
-cooking oil spray
(makes 4-6 patties)
Cut the mushrooms into small pieces and put in a large bowl. Add ¾ package of shredded cheese of your choice (I usually use one of Trader Joe’s light cheese blends). Crack in 3 eggs, and add in some salt and pepper (and a little crushed red pepper if you want your burgers to have a “kick”). Put some bread crumbs into the bowl and stir mixture. Then shape into patties, and cover both sides with a little more bread crumbs.
Heat the cooking oil (I use olive oil spray) in a large pan and cook burgers on both sides until the patties brown and the cheese starts to melt, adding more cooking oil as needed. Be careful when flipping, since the burgers can be delicate. When done, you may want to put the burgers on a paper towel-lined plate to dry them out a little.
You can serve these burgers in buns with your favorite add-ons and condiments (ketchup goes very well with them). I’ve also ditched the bun and just cut into the burgers with a knife and fork.
